Serves 4
A quick and easy meat-free meal that is high in protein, nutrient dense and delicious. Add red onion, cress microgreens and jalepenos if you want to spice it up some more.
8 corn tortillas
1 can Refried Beans
2 c. Tasty Cheese, grated
3 T. Coconut oil
Baby spinach leaves
Pea shoots microgreens
Coriander microgreens
Edible flowers (optional)
Avacado, sliced
Sour Cream (optional)
Salsa (optional)
Heat coconut oil in a frypan on med-high heat. Spread refried beans evenly over tortillas and fry tortilla side down in the pan. Sprinkle cheese over tortillas, cover pan and turn heat down to low until cheese is melted.
Once the cheese is melted, remove from heat and place on a paper towel to drain. Top with baby spinach leaves, avacado, pea shoots and coriander microgreens. Decorate with torn petals of edible flowers if desired.
